Recipe: Rajas con Queso

I made rajas con queso today. I’m from Mexico and it’s hard to find good Mexican food sometimes in Texas. Yeah, I know, there are a lot of Mexican food places, but not a lot of them give me that taste of home from restaurants back home.
So today I decided to make Rajas.
I was grocery shopping and I saw the poblano peppers (they are always there, but I seldom buy them) and grabbed 4 to make the dish for my husband and I. I quickly looked up a recipe online and I was ready to go (www.mexicanfoodjournal).
I cut the onion and put the poblano peppers on the stove to roast them. Once roasted enough for my taste I put them inside a bag to make them soft and tender. I later peeled them under warm running water.
I prepped all the ingredients and waited for dinner time!
I think I used to much Mexican cream, but they were still yummy. I ate five tacos!
